Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 cups fresh spinach chopped
  • 8 oz cream cheese softened
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic minced
  • 1 tsp onion powder
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • 1 tbsp olive oil

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Stir in chopped spinach and cook until wilted.
  4. In a bowl, combine cream cheese, mozzarella, onion powder, salt, pepper, and red pepper flakes with the wilted spinach.
  5. Cut a pocket into each chicken breast for stuffing.
  6. Stuff each chicken breast generously with the spinach mixture.
  7. Secure the openings with toothpicks and season the outside of chicken.
  8. In the same skillet, sear the stuffed chicken on both sides until golden brown.
  9. Transfer the seared chicken to a baking dish and bake in the preheated oven.
  10. Let rest for a few minutes before serving.
