- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Stir in chopped spinach and cook until wilted.
- In a bowl, combine cream cheese, mozzarella, onion powder, salt, pepper, and red pepper flakes with the wilted spinach.
- Cut a pocket into each chicken breast for stuffing.
- Stuff each chicken breast generously with the spinach mixture.
- Secure the openings with toothpicks and season the outside of chicken.
- In the same skillet, sear the stuffed chicken on both sides until golden brown.
- Transfer the seared chicken to a baking dish and bake in the preheated oven.
- Let rest for a few minutes before serving.
Notes
Serve with a side of roasted vegetables or simple pasta for a complete meal. Store leftovers in an airtight container in the fridge for up to 3 days.
