  • 2 tablespoons olive oil
  • 1 lemon zested and juiced
  • 2 tablespoons capers rinsed
  • 1 teaspoon garlic minced
  • Salt and pepper to taste
  • 1 pound fresh asparagus trimmed
  • Fresh parsley for garnish

Method

  1. Preheat your oven to 400°F (200°C).

  3. In a small bowl, combine lemon juice, zest, minced garlic, and capers.
  4. Spoon the lemon caper mixture over the cod fillets, ensuring they're generously coated.
  5. Place the trimmed asparagus around the cod on the baking sheet. Drizzle with a bit more olive oil and season with salt and pepper.
  6. Bake for 20-25 minutes, or until the fish flakes easily with a fork and the asparagus is tender yet slightly crisp.
