Method
- Preheat your oven to 400°F (200°C).
- In a medium skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté until softened, about 5 minutes.
- Stir in minced garlic, smoked paprika, and red pepper flakes. Cook for an additional 1-2 minutes, until fragrant.
- Add crushed tomatoes and oregano to the skillet, stirring well to combine. Let simmer for about 5-7 minutes.
- While the sauce simmers, cook the gnocchi according to package instructions until they float in the boiling water, about 2-3 minutes. Drain and set aside.
- In a large baking dish, combine the cooked gnocchi with the smoky tomato sauce. Stir to coat every piece generously.
- Sprinkle the mozzarella and Parmesan cheese evenly over the top of the gnocchi.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven, let cool slightly, then top with fresh basil if using, and serve.
Notes
For optimal flavor, serve immediately after baking. Leftovers can be stored in an airtight container for up to 3 days, and simply reheat in the oven or microwave.
