Ingredients
  

  • 8 ounces of halloumi cheese cubed
  • 1 red bell pepper cut into chunks
  • 1 zucchini sliced
  • 1 red onion cut into wedges
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup fresh mint leaves
  • 1 tablespoon red wine vinegar

Method
 

  1. Prepare the skewers by soaking wooden skewers in water for at least 30 minutes beforehand.
  2. Thread the halloumi and vegetables onto the skewers, alternating ingredients for visual appeal.
  3. Drizzle olive oil over the skewers and season with salt and pepper.
  4. Preheat your grill to medium-high heat.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally.
  6. While the skewers are grilling, prepare the mint vinaigrette.
  7. Once grilled, remove the skewers from the grill and drizzle with the mint vinaigrette.

Notes

For best results, prepare the skewers just prior to grilling to maintain freshness. Leftover skewers can be quickly reheated in a skillet or enjoyed cold.
